Busy Sundays & Recipes

Since adding kickball to our lives, Sundays have been a very full day. Especially since the Steelers have had Sunday games the last two weeks. We have found ourselves basing the weekend as good or bad depending on how many wins we took home. Last weekend was rough- Arkansas and Baylor both lost Saturday and then our kickball team and the Steelers lost on Sunday. 0 for 4 was not a great record. This weekend we are at 500 with Baylor and our kickball team taking home the W (we don't need to talk about the other two- but we are anxious for Troy to get healthy and playing defense again for the Steelers). A few game day recipes that I have been making I wanted to share with you- they are great for snacking or sharing with many people.

The first is Turkey Chili. This recipe is from The Nest.com and is excellent. I added canned corn the second time I made it for a little color and crunch.

The second is a recipe from my Grama Jean, not sure where she got it from. But we have each made it and tweaked it to our liking.
Corn Dog Muffins

2 packages (8.5-oz each) cornbread mix(Jiff)
2 T. brown sugar (I did not add this)
2 eggs
1 1/2 Cups milk
1 Cup grated cheddar cheese
hot dogs, cut in thirds or sliced into bits

1. Lightly grease muffin tins
2. Stir together the cornbread mix
and the grated cheese.
3. Whisk the eggs and milk together and
fold into the dry mixture until moistened.

Spoon batter into Muffin tins until 2/3 full.
Add 1/3 hot dog into center or on top of each muffin.
4. Bake 14 - 18 minutes or until golden
brown on 350. I baked mine 15 minutes. This
made 20 muffins & used 7 hot dogs.
