Fall and Yummy Pumpkin!



Here are a few camera phone shots of trees I pass on my walk from the office to the bus at the end of my work day. Thanks again to picnik.com for free editing that makes them really shine into the beauty I get to see every day right now.

We are appreciating the fullness of fall by indulging in pumpkin delights. This week kicked it off for us as our community group decided to go all-pumpkin for our Thursday dinner together. We brought a pumpkin pound cake (courtesy of Kroger bakery- hey it was a work night). Our hosts made some pumpkin and apple soup. Heath was especially found of that one. Our friend Peter made pumpkin quesadillas which were surprisingly delicious (we credit the strong prayer ahead of the mealtime). And to wrap things up the Osters baked pumpkin chocolate chip cookies.

After taking some cookies home with us that quickly disappeared we figured it was time for us to get to baking. Yesterday Jonathan made us pumpkin chocolate chip pancakes- that made my morning coffee taste even better. Then last night we carved a pumpkin together while watching Charlie Brown and the Great Pumpkin (ok J carved and Heath and I watched). We toasted the pumpkin seeds with some butter and salt, they turned out dry but still fun to bake.



Today we used the last cup of the pumpkin that was left and made our own cookies following this recipe: http://www.runningtothekitchen.com/2011/09/pumpkin-pumpkin-everywhere/ (although 1/2 cup chocolate chips didn't seem like it would do so I used the 1 cup we had left and then chopped up some Hershey's Special Dark we had left from s'mores and added that to the mix.

Delicious.

  2. Funny - i JUST made pumpkin dark chocolate chip cookies, too. Now I have a lot of pumpkin leftover and am thinking pumpkin bread... though that pancake idea may be compelling as well.
